Banana Bread

  • 185g Butter
  • 360g Banana, very ripe
  • 180g Brown Sugar
  • 50g Sugar
  • 3ea Egg
  • 2 tsp Vanilla
  • 120g Sour Cream
  • 270g Flour
  • 5g Baking Soda
  • 2g Salt
  • 2 tsp Cinnamon
  • 1/2 tsp Cardamom
  • 10g Kikkoman® Sushi (Unagi) Sauce
  • 1 tsp Espresso Powder

Kikkoman Sushi Caramel Sauce

  • 200g Sugar
  • 120g Cream
  • 75g Butter
  • 3g Vanilla Bean Paste
  • 30g Kikkoman® Sushi (Unagi) Sauce
  • Maldon Salt, to taste

Directions

Banana Bread:

  • Brown butter on stovetop (should have 170 g to put into recipe).
  • Mix together dries: flour, baking soda, salt, cinnamon, espresso powder and cardamom.
  • Mash bananas until smooth (some lumps are okay).
  • Add in melted brown butter, sugar, brown sugar, eggs, vanilla, Kikkoman® Sushi (Unagi) Sauce and sour cream. Fold in dries.
  • Pour into loaf pans or sheet trays. Bake at 350 degrees until knife inserted in the center comes out clean (30-60 minutes depending on size of loaf pan).

Kikkoman Sushi Caramel Sauce

  • Brown butter on stovetop (should have 50 g to put into recipe!).
  • Make a dry caramel with the sugar.
  • Carefully whisk in warmed cream, then butter and vanilla paste.
  • Add Kikkoman® Sushi (Unagi) Sauce last and mix to incorporate. Let cool. Sprinkle with Maldon salt right before serving.
