Matcha Soy Milk Tarts with Whipped Yuzu Curd and Coconut Tuiles

These tarts feature a creamy matcha soy milk filling topped with a tangy, whipped yuzu curd. Crispy toasted coconut tuiles add a satisfying crunch to balance the smooth citrus and earthy tea flavors.

Ingredients
For the tart filling:
60g Cornstarch
200g Sugar, granulated (divided)
910g Kikkoman® Soy Milk (divided)
8 ea. Egg yolk
Pinch Salt, kosher
2 tsp Vanilla bean paste
60g Butter, unsalted
20g Matcha
70g Water, hot
For Whipped Yuzu Curd:
382g Sugar
408g Egg
325g Yuzu juice
565g Butter, unsalted, soft
4 ea. Gelatin, sheet
200g Cream, heavy
For Coconut Tuile:
30g Butter, unsalted, melted
50g Sugar
1 ea (30g) Egg white
15g Flour, all purpose
25g Coconut, unsweetened, shredded
Pinch Salt, kosher
1/4 tsp Vanilla extract
Allergens: Eggs, Dairy, Soy, Gluten, Treenut (Coconut)
Directions
For Tart Filling:
- Dissolve matcha in hot water until no longer clumpy.
- Whisk together cornstarch, 40g sugar, 225g soy milk, and egg yolks. Set aside
- In a saucepan, combine remaining soy milk and sugar, and bring to a boil. Remove from the heat and pour some of the hot liquid into the starch mixture.
- Add all of the liquid back into the pot and cook over medium heat, whisking constantly.
- Continue to cook until the mixture thickens and begins to bubble.
- Remove from the heat and add the butter, matcha mixture and vanilla.
- Pour mixture into prepared tart shells.
- Bake at 325 degrees for 10-12 minutes to set the surface. Chill for two hours minimum before serving.
- Top each tart with the Whipped Yuzu Curd and a Coconut Tuile and serve.
For Whipped Yuzu Curd:
- Bloom gelatin in cold water.
- In a bowl set over a pan of boiling water, mix sugar, egg, and yuzu juice. Whisk until thickened.
- Strain, add in bloomed gelatin.
- Using an immersion blender, blend in soft butter until completely smooth.
- Transfer curd to a stand mixer fitted with the whisk attachment. Add heavy cream slowly and whip until medium-stiff peaks.
For Coconut Tuile
- Toast coconut until golden brown. Let cool, then briefly pulse in food processor until fine.
- In a small bowl, whisk together melted butter, sugar and egg white until smooth.
- Whisk in flour, salt, and vanilla. Stir in shredded coconut.
- Drop small spoonfuls of batter onto Silpat or greased parchment paper and spread thinly into circles. Keep spacing of at least two inches, as the tuiles will spread.
- Bake 6-8 minutes at 350 degrees until golden brown on the edges.
- Let cool and break into shards.
