Kikkoman Ingredients – Poke Sauce

ingredients

Roasted Beets

2 lbs. Ruby Beets

2 lbs. Golden Beets

1/2 cup Peanut Oil

1/2 cup Kikkoman® Toasted Sesame Oil

1/2 cup Kikkoman® Rice Wine Vinegar

1/2 cup Kikkoman® Citrus Seasoned Ponzu Dressing

Poke Assembly

1/2 cup Roasted and Diced Ruby Beets

1/2 Roasted and Diced Golden Beets

2 Tbsp Kikkoman® Poke Sauce

1 Tbsp Cotija Cheese, Crumbled

directions

Roasted Beets:

  1. Tip and tail the beets and arrange each color of beet in their own 2” ½ hotel pan.
  2. Pour oil and vinegar mixture evenly over each pan of beets, cover with foil, and roast in 400 º F oven for 30 minutes, or until beets are tender. 
  3. Cool beets and peel off skin. Dice beets in desired size, approximately ½ inch. Keep ruby and yellow beets separate until ready to dress and serve so colors don’t transfer.

 

Assembly:

  1. In a small mixing bowl, combine the ruby and golden roasted beets with the Poke Sauce. Add more sauces as desired. 
  2. Spoon into a service bowl and sprinkle with crumbled cheese.
