Sweet and Sour Breakfast Tofu Scramble

ingredients

½ cup olive oil 

½ cup minced garlic 

3 qt. red, orange, or yellow bell pepper, diced 

3 qt. zucchini, diced 

1 ½ qt. onion, diced 

1 lb. shiitake mushrooms, destemmed, sliced 

12 lbs. firm tofu, drained, pressed, crumbled 

1 ½ cups Kikkoman Less Sodium Gluten-Free Sweet and Sour Sauce 

1 Tbsp. Kosher salt 

1 tsp. ground black pepper 

1 cup scallions, thinly sliced, for garnish 

directions

  1. Heat the oil over medium-high heat. Add the garlic and cook until fragrant, about 1-2 minutes.  2. Add the bell peppers, zucchini, onion, and mushrooms. Sauté until the vegetables are tender,  about 5-7 minutes. 
  2. Add the tofu to the vegetables. Stir to combine. 
  3. Pour the sweet and sour sauce into the tofu and vegetables and cook the mixture for 2-3  minutes, allowing the flavors to meld and the sauce to coat everything. 
  4. Season with the salt and pepper. 
  5. Garnish with the green onions.
