- Place artichoke heart halves between a few sheets of paper towel and gently press to release liquid.
- Add flour to a small bowl and set aside.
- Beat eggs in a separate bowl until smooth and pale yellow.
- Add panko, Parmesan cheese, Italian seasoning, salt and pepper to a third bowl and stir well.
- Grease basket of air fryer with cooking spray. Working in 2 batches, hold artichoke hearts by the end, dip into flour to lightly coat, followed by egg, and lastly in panko mixture. Place into air fryer basket leaving space between each artichoke to ensure crispy coating.
- Air fry at 380ºF for 10 minutes, until crispy and golden brown. Repeat with remaining artichoke hearts.
- While artichokes cook, stir together ingredients for dipping sauce in a small bowl until smooth.
- Serve artichoke hearts warm with dipping sauce.
