- In a small bowl, mix rice vinegar, sugar, and salt. Microwave for 10 seconds, or until sugar dissolves when stirred. Mix with cooked sushi rice and adjust seasonings to taste.
- Stuff tofu pockets with seasoned sushi rice. Optional: To decorate inari sushi into ducks, ad black sesame seeds for the eyes and corn for the beaks.
- Cut 4 vertical slits into each mini hotdog, about halfway up. Boil for 2-3 minutes, or until slits begin to peel away from the base and form tentacles.
- Add teriyaki sauce to a pan with hotdogs. Cook on medium heat for 2-4 minutes, or until teriyaki thickens and evenly coats hot dogs.
- Assemble bento box with inari sushi, teriyaki hot dogs, and anything you’d like such as seaweed salad, rolled omelet, cucumbers, carrots, and green onion.
