ingredients

Oil
½ small white onion, sliced
1 small zucchini, sliced
½ cup frozen vegetable medley (carrots, green beans, corn, edamame)
1 + 1 tablespoons Kikkoman® Less Sodium Soy Sauce, divided
4 ounces chicken breast
1 tablespoon olive oil
1 teaspoon paprika
1 + 1 teaspoons garlic powder, divided
Salt, to taste
Pepper, to taste
1 cup jasmine rice, cooked
1 teaspoon Kikkoman® Sesame Oil​​
1 teaspoon ginger powder
1 teaspoon curry powder
Salt, to taste

For Serving
Fresh herbs
Lime

directions

  1. Warm up a medium pan with any non-stick oil, then add in your sliced onion​.​
  2. Once the onion is translucent, add your zucchini and frozen veggies.
  3. Season veggies with 1 tablespoon soy sauce and stir to combine​.​
  4. To prepare the chicken breast, coat in olive oil & seasonings, then cook about 7 minutes on each side in a small pan or until it reaches an internal temp of 165°F. ​
  5. Once vegetables are fork tender, add in one cup cooked rice and cooked and chopped chicken breast and stir to combine​.​
  6. Add in an additional tablespoon soy sauce along with sesame oil and stir to combine​.​
  7. Season with garlic powder, ginger powder, curry powder and salt to taste.
  8. Finish with fresh herbs and a squeeze of lime juice (optional) and enjoy! ​
