- Warm up a medium pan with any non-stick oil, then add in your sliced onion.
- Once the onion is translucent, add your zucchini and frozen veggies.
- Season veggies with 1 tablespoon soy sauce and stir to combine.
- To prepare the chicken breast, coat in olive oil & seasonings, then cook about 7 minutes on each side in a small pan or until it reaches an internal temp of 165°F.
- Once vegetables are fork tender, add in one cup cooked rice and cooked and chopped chicken breast and stir to combine.
- Add in an additional tablespoon soy sauce along with sesame oil and stir to combine.
- Season with garlic powder, ginger powder, curry powder and salt to taste.
- Finish with fresh herbs and a squeeze of lime juice (optional) and enjoy!
