- Preheat oven to 350ºF and line a large baking sheet with parchment paper. Whisk together flour, oats, baking soda, cinnamon and salt in a medium mixing bowl.
- In a separate large mixing bowl, use a hand mixer to beat butter, sesame oil, brown sugar and cane sugar until creamy and fluffy. Beat in egg and vanilla extract until just combined.
- Slowly beat in the flour mixture until just combined. Use a cookie scooper to scoop dough and roll into balls. Dip in sesame seeds and place on baking sheet 2 inches apart.
- Bake for 12-15 minutes until cookies are just set. Cool at room temperature for 15-20 minutes before serving.
