Hot Chili Oil
¼ cup vegetable oil
2 tablespoons Kikkoman® Sesame Oil
2 teaspoons chili flakes
½ teaspoon ground Szechuan pepper powder

Dan Dan Sauce
2 tablespoons creamy peanut butter, at room temperature
¼ cup Kikkoman® Soy Sauce
⅓ cup chicken stock
1 tablespoon Kikkoman® Rice Vinegar
1 tablespoon brown sugar
½ teaspoon Chinese Five Spice Powder

 Pork
1 tablespoon vegetable oil
1 pound ground pork
1 tablespoon Kikkoman® Hoisin Sauce
1 tablespoon Kikkoman® Rice Vinegar
½ teaspoon Chinese five-spice powder

For Serving
10 ounces thin wheat noodles
2 cups leafy greens (spinach, Bok Choy, mustard greens)
¼ cup green onions, chopped
¼ cup roasted peanuts, chopped

directions

  1. Heat vegetable oil in a small saucepan over low heat until oil just starts to sizzle, about 1 minute. Turn the heat off. Whisk sesame oil, chili flakes and ground Szechuan pepper into oil. Pour into bowl and set aside.
  2. Whisk together ingredients for Dan Dan sauce in a small bowl or measuring cup. Whisk in 2 tablespoons of prepared hot chili oil. Set aside.
  3. Heat oil in a large skillet over medium-high heat for 1 minute. Add pork and cook until lightly browned, about 5 minutes, using a spatula to crumble the meat. Reduce heat to medium and add hoisin sauce, rice vinegar and Chinese five-spice powder to skillet. Cook 2-3 minutes longer, until pork is fully cooked.
  4. While pork cooks, boil noodles in a large pot according to package directions. Right before draining noodles, add leafy greens to pot and stir. Drain and set aside.
  5. Divide the Dan Dan Sauce between four bowls. Top with noodles followed by pork. Garnish with chopped green onions and peanuts. Serve with remaining chili oil.

THE STORY OF SOY SAUCE

Even people who love soy sauce and use it all the time are often surprised to learn what it is and how it’s made. We make ours from just four simple ingredients—water, soybeans, wheat, and salt. Those ingredients are transformed through a traditional brewing process—much like making wine or beer—that has remained unchanged for centuries.
