7 ounces lo mein noodles
2 tablespoons neutral cooking oil, divided
1 pound chicken breast, cut into bite sized pieces
1 cup chopped asparagus
1 cup drained cut baby corn
1 cup julienned red bell pepper
½ cup chopped sweet onion
⅔ cup Kikkoman® Teriyaki Takumi, Original
⅓ cup chopped roasted cashews

directions

  1. Begin cooking noodles according to package directions. In the meantime, add 1 tablespoon of oil to a large skillet over medium-high heat. When oil is very hot, add chicken and brown for 8 minutes, turning after 4 minutes.
  2. Add remaining oil to skillet. Stir in vegetables and cook for 3 minutes, stirring regularly. Reduce heat to medium and stir in teriyaki takumi sauce. Cook 2 minutes longer.
  3. Drain noodles and immediately add to skillet. Noodles should still be slightly wet. Use tongs to gently incorporate noodles. Cook 1 minute longer, then serve hot topped with chopped cashews.
