Fresh Fish Brine

kikkoman products used:

ingredients

1/2 gallon water
2 cups Kikkoman Soy Sauce
1-1/2 cups brown sugar
1/3 cup kosher salt
2 tablespoons ginger, grated
2 tablespoons garlic, crushed
1 lemon, juiced
10 pounds fish*

directions

Combine water, soy sauce, brown sugar, salt, ginger, garlic and lemon juice in a large container. Whisk until salt and sugar are totally dissolved. Place the fish in the brine and marinate for about 8 hours or overnight. Remove the fish and pat dry, discard the leftover brine.
