ingredients

2 cups of sweet potato, chopped into strips
4 tablespoons olive oil
¼ teaspoon salt
¼ teaspoon pepper
1 ½ cups brown rice
250 grams firm tofu
¼ cup Kikkoman® Soy Sauce
2 tablespoons Kikkoman® Sesame Oil
1 tablespoon lime juice
1 tablespoon ginger, grated
1 bunch bok choy or spinach
1 cup bean sprouts
¼ cup cilantro, fresh
¼ cup quick pickled vegetables
2 tablespoons sesame seeds

directions

  1. Preheat oven to 350℉.
  2. Place sweet potatos onto baking tray, drizzle on olive oil, sprinkle on salt and pepper and toss to coat. Bake in the oven for 45 minutes.
  3. Meanwhile, cook rice according to package instructions.
  4. Chop the tofu into small cubes, place in a bowl and add soy sauce, sesame oil, lime juice, and ginger. Stir to coat the tofu evenly.
  5. When the sweet potato has about 15 minutes left, put the tofu and sauce into a skillet over medium high heat. Allow the sauce to thicken with the tofu for 5 minutes and then add the greens and cook for another 5 minutes.
  6. When you’re ready to serve, put ¼ of the rice in each bowl and top with tofu and greens, sweet potato, sprouts, cilantro, quick pickled vegetables and sesame seeds.
