ingredients

For the Salad
1 cup dry quinoa, rinsed
1 can (15 ounces) chickpeas, drained and rinsed
1 cup grape or cherry tomatoes, halved
1 cup cucumber, diced
¼ cup red onion, finely chopped
½ cup fresh parsley, chopped
2 tablespoons fresh mint, chopped
¼ cup fresh cilantro, chopped 

For the Ponzu Dressing
3 tablespoons Kikkoman® Ponzu
2 tablespoons olive oil
1 teaspoon Dijon mustard
1 clove garlic, minced
1 tablespoon fresh lemon juice
Black pepper to taste 

directions

  1. In a saucepan, combine 1 cup of quinoa with 2 cups of water. Bring to a boil, reduce heat, cover, and simmer for 15 minutes or until the water is absorbed. Remove from heat, fluff with a fork, and let cool for 10 minutes.
  2. In a small bowl or jar, whisk together Ponzu Sauce, olive oil, mustard, garlic, lemon juice, and black pepper until emulsified.
  3. In a large bowl, combine cooked quinoa, chickpeas, tomatoes, cucumber, red onion, parsley, mint, and cilantro.
  4. Pour the dressing over the salad and toss well to coat.
  5. Refrigerate salad for 1-2 hours before serving. Stir before serving.
