In a large slow cooker, combine chicken, sausage, tomatoes, onions, green pepper, celery and Soy Sauce. Stir in Creole seasoning and bay leaves. Cover, and cook on LOW for 7 hours. Stir in the thawed shrimp, and rice, stir to combine.
