- Boil water and cook lo mein noodles as per package instructions.
- Place wok on medium high heat, add avocado oil and chicken breast. Cook chicken until it reaches an internal temperature of 165°F, about 4 minutes.
- Remove the chicken and add in the carrots, pepper, bok choy, mushrooms.
- Mix together sauce ingredients in a small bowl.
- Add cooked lo mein noodles, sauce and chicken and sauté them together until sauce evenly covers the noodles and chicken.
