About this recipe

These chicken lettuce cups are crunchy, savory, and packed with flavor in every bite. Juicy chicken thighs are stir-fried with bell peppers, mushrooms, and a sweet-savory glaze using Kikkoman® Hoisin Sauce and Kikkoman® Yuzu Ponzu—then tucked into crisp butter lettuce cups and topped with herbs and nuts for extra punch. It’s a fresh, fast weeknight dinner that doubles as a crowd-pleasing appetizer. 

Tips & Tricks 

  • For an extra crunch, add water chestnuts or shredded carrots to the chicken mixture.
  • Butter lettuce is ideal for this dish thanks to its soft, scoop-like shape, but you can also use romaine or little gem. 
  • Swap chicken for ground turkey for a lighter spin on these lettuce cups. 
  • Make it spicy with a drizzle of sriracha or chili crisp right before serving. 

ingredients

1 tablespoon vegetable oil
1 pound boneless, skinless chicken thighs, chopped into bite-sized pieces
1 cup bell pepper, thinly sliced
1 cup shiitake mushrooms, sliced
1 teaspoon garlic, minced
¼ cup Kikkoman® Hoisin Sauce
1 tablespoon Kikkoman® Yuzu Ponzu
3 green onion stalks, sliced
1 head butter lettuce, separated into cups

¼ cup cilantro, chopped
2 tablespoons cashews or peanuts, chopped

directions

  1. Heat a large skillet over medium-high heat and add the vegetable oil. Add chicken thighs and cook for 6 to 8 minutes, stirring occasionally, until browned and cooked through. Add bell pepper and mushrooms. Cook for 3 minutes. Add minced garlic and cook 1 minute, until fragrant.
  2. Lower heat to medium and stir in the hoisin sauce and yuzu ponzu. Mix well and cook for another 2 to 3 minutes until the sauce is slightly thickened and coats chicken. Remove the skillet from heat and stir in half of the green onions.
  3. To assemble, spoon chicken mixture into each lettuce cup. Top with remaining green onions, cilantro, and chopped nuts. Serve immediately.
