ingredients

8 ounces Yi Mein noodles or flat wheat noodles
2 tablespoons Kikkoman® Sesame Oil
3 ounces shiitake mushrooms, coarsely chopped
3 ounces oyster mushrooms, coarsely chopped
1 clove garlic, minced
2 green onions, sliced into 2-inch pieces
1 tablespoon Kikkoman® Soy Sauce
2 tablespoons Kikkoman® Oyster Sauce
½ teaspoon cane sugar
⅓ cup warm water
¼ teaspoon red pepper flakes

directions

  1. Cook noodles according to package instructions.
  2. While noodles boil, heat sesame oil over medium heat in a medium sized skillet. Add mushrooms and sauté 5 minutes, stirring occasionally. Add garlic and green onion. Sauté 3 minutes. Stir in soy sauce, oyster sauce, cane sugar, and hot water. Continue to cook for 2 minutes longer to dissolve the sugar.
  3. Strain noodles, immediately add to the skillet and toss with tongs to coat the noodles. Serve hot garnished with red pepper flakes.

THE STORY OF SOY SAUCE

Even people who love soy sauce and use it all the time are often surprised to learn what it is and how it’s made. We make ours from just four simple ingredients—water, soybeans, wheat, and salt. Those ingredients are transformed through a traditional brewing process—much like making wine or beer—that has remained unchanged for centuries.
