- Bring water to a boil in a pot. Once boiling, add noodles to water for 3-4 minutes and drain when finished. Rinse in cold water to prevent sticking. Pour noodles into a bowl and set aside.
- Heat a sauté pan to medium-high heat and add olive oil. Add shrimp to the pan and stir-fry. The shrimp are done when they become pink and opaque. If using pre-cooked shrimp, stir-fry until heated through. This usually takes about 4-5 minutes.
- Reduce heat and add sauce and green onion to pan and sauté for 2 more minutes.
- Pour shrimp mixture over noodles and top with bean sprouts, peanuts, cilantro, green onions, and lime wedge, if desired.
