- Combine ingredients for Pad Thai sauce in a small bowl and stir well. Add chicken and noodles and gently stir to coat. Set aside for 5 minutes to allow noodles to absorb the sauce.
- Place one tortilla on a clean work surface. Add 1 lettuce leaf towards the lower half of the tortilla and top with ½ of the chicken/rice noodle mixture. Add ½ of the bean sprouts, carrots, cilantro and peanuts.
- Fold the bottom up and fold in the sides. Roll the tortilla away from you snugly. Repeat with remaining tortilla. Slice wraps in half and enjoy.
