- Make sushi rice according to package instructions. Mix cooked rice with rice vinegar and sugar. Set it aside.
- In a bowl, combine chopped salmon, ponzu, soy sauce, sesame oil, and green onion. Mix until well combined.
- To assemble the hand rolls, place half a nori sheet on a flat surface. Add about 1-2 tablespoons of sushi rice, then top with cucumber, carrots, clover sprouts, and ponzu salmon mixture.
- Start from the filling side, roll the nori into a cone shape. Use a grain of rice to seal the edges if needed. Serve immediately and enjoy!
