- Heat your oil in a sauté pan.
- Cube the salmon and add to a bowl with scallion whites, chili flakes, salt, ponzu, mayo, lemon zest, Masago, rice vinegar and crushed black pepper, and mix.
- Fry your wonton wrappers on medium-high heat in oil until just golden brown, then remove to a paper towel/wire rack and season with salt.
- Slice your avocado and place on top of wonton wrappers with the salmon.
- Garnish with scallion greens and enjoy!
