- In a medium skillet, sear pulled pork with stir-fry sauce until evenly coated.
- Lay out 4 slices of thick, white bread and lightly press the centers to flatten.
- Spoon about 1-2 tablespoons of the stir-fry pork mixture onto the center of each slice.
- Top each with a sprinkle of chopped scallions and diced carrots.
- Place another slice of bread on top and press edges firmly together. Use a sandwich sealer or fork to seal the edges.
- Lightly brush the tops with olive oil.
- Bake the sandwich pockets at 400°F for 6 to 8 minutes, or until golden and crispy.
- Let cool slightly before serving and dip in more stir fry sauce, as desired.
