kikkoman products used:

ingredients

1 cup unbleached all-purpose flour
2 teaspoons baking powder
¾ teaspoon kosher salt
1 cup non-fat Greek yogurt
1 egg white, beaten (use the whole egg, if preferred)
1 tablespoon Kikkoman® Less Sodium Soy Sauce
1 tablespoon sesame seeds

directions

  1. In a medium bowl, combine the flour, baking powder and salt and whisk to combine. Add the yogurt and mix with a fork or spatula until well combined. The mixture will look like small crumbles.
  2. Lightly dust flour on a work surface and remove dough from the bowl, knead the dough a few times until dough is tacky, but not sticky, about 20 turns. (It should not leave dough on your hand when you pull away.)
  3. Divide into 4 equal balls. Roll each ball into ¾-inch thick ropes and join the ends to form bagels.
  4. Wisk together egg and soy sauce and then brush over each bagel. Sprinkle with sesame seeds.
  5. Preheat the air fryer to 280ºF. Without overcrowding, bake 15 to 16 minutes, or until golden. No need to turn. Let cool at least 15 minutes before cutting.

THE STORY OF SOY SAUCE

Even people who love soy sauce and use it all the time are often surprised to learn what it is and how it’s made. We make ours from just four simple ingredients—water, soybeans, wheat, and salt. Those ingredients are transformed through a traditional brewing process—much like making wine or beer—that has remained unchanged for centuries.
