Made with a hearty mix of black beans, shiitake mushrooms, walnuts, and red bell peppers, these patties are seasoned with Kikkoman® Teriyaki Baste & Glaze for a sweet and savory kick. Layered on soft hamburger buns with fresh lettuce and red onion, these burgers are as satisfying as they are delicious. 

This veggie burger recipe delivers the perfect combination of texture and flavor. The black beans and walnuts provide a hearty base, while the sautéed vegetables add a depth of flavor that elevates these patties beyond your average veggie burger. Lightly pan-fried for a crisp exterior, these teriyaki veggie burgers are ideal for weeknight dinners, barbecues, or even meal prep. 

Tips and Tricks 

  • For best results, refrigerate the veggie mixture for 15-20 minutes before forming patties to make them easier to shape and handle.
  • If you prefer a vegan option, replace the eggs with a flaxseed or chia seed substitute.
  • Cook the patties in an air fryer at 375°F for 10-12 minutes for a crispier texture, flipping halfway through.
  • Pair your teriyaki burger with sweet potato fries or a light side salad for a complete meal.

1 + 1 tablespoons neutral cooking oil, divided 
1 cup shiitake mushrooms, sliced
½ cup red bell pepper, chopped
½ cup yellow onion, chopped
1 teaspoon garlic, minced
1 (15 ounce) can black beans, drained and rinsed
½ cup oat flour
½ cup chopped walnuts
2 large eggs 
¼ cup Kikkoman® Teriyaki Baste & Glaze 

For Serving
4 hamburger buns
Leafy green lettuce

directions

  1. Heat 1 tablespoon of oil over medium heat in a skillet. Add mushrooms, bell pepper, and onion. Sauté for 5 minutes. Add garlic and sauté 2 minutes longer. Turn heat off and cool vegetables for 5 minutes.  
  2. Add vegetables and black beans to a food processor and pulse a few times to crumble finely. Add oat flour, walnuts, eggs, and teriyaki.  Pulse to combine.  
  3. Heat remaining oil over medium heat in a large skillet. Shape veggie mixture into 4 round patties. Place patties on skillet and cook for 3-4 minutes on each side.  
  4. Top burger buns with lettuce, veggie patties, a drizzle of remaining teriyaki sauce, red onion slices and the top bun. Serve warm.
