ingredients

4 slices sourdough bread
1 tablespoon olive oil
1 tablespoon ghee
4 cups white button mushrooms, sliced
1 clove garlic, thinly sliced
1 tablespoon Kikkoman® Soy Sauce
1 cup whole milk ricotta cheese
1 tablespoon + 4 tablespoons fresh basil, chopped, divided
⅛ teaspoon sea salt
⅛ teaspoon black pepper

directions

  1. Preheat oven to 375ºF. Place slices of sourdough bread on a baking sheet and drizzle with olive oil. Bake 8-10 minutes.
  2. Heat ghee over medium heat in a medium size cast iron pan. Add mushrooms and garlic. Sauté for 5 minutes. Stir in soy sauce and cook an additional 5 minutes until mushrooms are tender.
  3. In a small bowl, stir together ricotta cheese, basil, sea salt and black pepper.
  4. Spread ricotta cheese mixture onto each sourdough slice and spoon mushrooms on top. Serve garnished with additional basil if desired.
