- Preheat oven to 375ºF. Place slices of sourdough bread on a baking sheet and drizzle with olive oil. Bake 8-10 minutes.
- Heat ghee over medium heat in a medium size cast iron pan. Add mushrooms and garlic. Sauté for 5 minutes. Stir in soy sauce and cook an additional 5 minutes until mushrooms are tender.
- In a small bowl, stir together ricotta cheese, basil, sea salt and black pepper.
- Spread ricotta cheese mixture onto each sourdough slice and spoon mushrooms on top. Serve garnished with additional basil if desired.
