- Heat olive oil over medium heat. Add sweet potatoes and cook for 6-7 minutes, stirring regularly. Add mushrooms and cook for 5 minutes longer. Stir in spinach and cook until wilted, about 2 minutes.
- Add rice to pan. Add thyme, garlic powder, and soy sauce. Stir well and cook 1 minute longer.
- Transfer vegetables and rice to a serving bowl. Top with a fried or scrambled egg, sliced avocado, and cherry tomatoes. Season with pepper and enjoy hot.
