- Heat olive oil in a large skillet over medium heat add onions, bell pepper and celery. Sauté for 5 minutes. Add garlic and sauté 1 minute longer.
- Add vegetable stock, rice, teriyaki sauce, old bay seasoning, smoked paprika and tomato paste. Bring to a simmer and reduce heat to low. Cover with lid slightly cracked and cook 25-30 minutes, stirring occasionally until rice is tender.
- Add frozen okra, vegan sausage, and kidney beans. Stir well and cook 5 minutes longer. Serve hot garnished with fresh parsley.
