This is not your classic takeout! Create a new version of this takeout at home with a fun recipe that uses ramen noodles as the base for a quick and easy dinner. In less than 20 minutes, prepare chicken, fresh veggies, slurpy noodles, and a delectable sauce for a hearty family dinner. Get creative with any vegetables you have on hand, using frozen veggies, pantry items, or fridge leftovers to cut down on food waste. Takeout fakeout is the way to go!
1 tablespoon Kikkoman® Sesame Oil 1 pound chicken breasts, diced 1 cup pea pods ⅔ cup carrots, julienned ½ cup cut baby corn, drained 8 ounces ramen noodles 1 tablespoon toasted sesame seeds (for garnish) ¼ cup cilantro, chopped (for garnish)
For Sauce 1 ½ cups chicken stock ¼ cup Kikkoman® Less Sodium Soy Sauce 1 tablespoon Kikkoman® Sesame Oil 2 tablespoons fresh lime juice 1 tablespoon brown sugar 2 teaspoon garlic, minced 1 teaspoon ginger, grated
Whisk together ingredients for sauce in a small bowl and set aside.
Heat 1 tablespoon of sesame oil in pressure cooker on “Sauté” setting. Blot chicken pieces dry with paper towel. When sesame oil is sizzling, add chicken and brown for 6-7 minutes, stirring occasionally.
Press “Cancel” and move chicken to one side of pot. Add vegetables on top of chicken and add ramen noodles to the other side of pot. Pour sauce over noodles, making sure to saturate with sauce. Lock lid and close vent valve. Press “Manual” setting for 4 minutes.
When timer goes off, allow pressure to release for a few minutes before opening vent valve. When all pressure is released, open lid and toss noodles, vegetables and chicken to coat with sauce. Serve hot, garnished with sesame seeds and chopped cilantro.
Note: if some noodles aren’t cooked through, turn pressure cooker to “Sauté” setting and toss noodles using tongs. Cover with lid and cook 4-5 minutes longer until noodles are tender.
