Toasted Basmati Cherry Rice

Cherries in a savory dish? Don’t knock it till you’ve tried it! Take a chance on a quick and easy side dish with a flavor profile that’s a bit sweet, tart, and savory all at once. Take advantage of cherry season from late spring all the way through summer to include fresh, seasonal cherries in your recipe. This simple recipe uses just 9 ingredients and pairs well with grilled pork or turkey. A delicious and unique side at any time of year!

Total Time: 36 minutes

2 tablespoons unsalted butter
1 cup dry basmati rice
1 teaspoon garlic, minced
2 cups chicken stock
¼ cup Kikkoman® Less Sodium Soy Sauce
1 teaspoon dried basil
1 cup pitted cherries, halved
½ cup raw pecans, chopped and lightly toasted
½ cup fresh parsley, chopped


  1. Heat butter in a large pan over medium heat until melted. Add rice and stir to coat in butter. Cook for 5-6 minutes stirring regularly to lightly toast rice. Add garlic and cook 1 minute longer.
  2. Stir in chicken stock, soy sauce, and dried basil. Bring to a low boil and reduce heat to simmer. Simmer for 15-20 minutes, until liquid is absorbed, stirring occasionally.
  3. Add cherries, pecans and parsley. Stir gently to combine. Turn heat off. This rice can be enjoyed hot or chilled.
