Umami Sweet Fried Rice

Sweet & Savory Fried Rice | Fried rice is an excellent way to get vegetables and protein into an easy dinner recipe. Have a family meal ready in half an hour, even when you make your own stir-fry sauce from scratch. This gluten-free recipe can be switched up with any vegetables you have on hand and you can even add in leftover chicken, beef, or tofu. Meal prep takes just 10 minutes, making this a perfect weeknight recipe. Or why not make a double batch for lunches all week long!

Ingredients

For Sauce
1 tablespoon Kikkoman® Sesame Oil
1 tablespoon Kikkoman® Rice Vinegar
⅓ cup Kikkoman® Gluten-Free Sweet Soy Sauce for Rice

2 tablespoons + 1 tablespoon olive oil, divided
½ cupsweet white onion, minced
½ cup chopped carrots
2 cloves garlic, minced
1 teaspoon minced ginger
3 cups cooked/chilled white rice
2 large eggs, beaten
½ cup frozen green peas
2 tablespoons chopped green onion
¼ teaspoon black pepper
Sea salt to taste (optional)

Instructions

  1. Stir together ingredients for sauce and set aside. Heat 2 tablespoons of olive oil over medium heat in a medium skillet. Add onion and carrots, sauté for 8 minutes, stirring occasionally. Add garlic and ginger. Sauté 2 minutes longer. Transfer to a small bowl.
  2. Add remaining tablespoon of olive oil and rice to the skillet. Stir well. Allow rice to heat through and lightly toasted around the edges for 3 minutes, without stirring. Stir and cook 3 minutes longer.
  3. Move rice to one side of the pan and add eggs to the other side. Scramble eggs until cooked through.
  4. Add peas, green onion, onion and carrot mixture, black pepper and sauce to the pan and stir well. Season with sea salt to taste. Cook for 3-4 minutes, until peas are heated through.
