Herby Potato Salad

ingredients

8 cups water
3 pounds baby red potatoes, halved (quartered larger potatoes)
½ cup olive oil
½ cup mayonnaise
2 tablespoons Kikkoman® Rice Vinegar
2 tablespoons Dijon mustard
¼ teaspoon garlic powder
½ teaspoon sea salt
1 cup celery, chopped
½ cup green onion, chopped
½ cup curly parsley, chopped
2 tablespoons dill, chopped

directions

  1. Bring 8 cups of water to a boil in a large pot over medium heat. Add potatoes and boil for 30 minutes, or until fork tender. Drain and set aside.
  2. While potatoes boil, whisk together olive oil, mayonnaise, rice vinegar, mustard, garlic powder, and salt in a small mixing bowl. Transfer potatoes to a large mixing bowl. Drizzle with half of the dressing and stir to coat. Cover and refrigerate 1 hour to chill.
  3. Stir remaining dressing with potatoes and add celery, green onion, parsley and dill. Stir well. Refrigerate until serving.
