- Whisk together ingredients for sauce in a small bowl and set aside.
- Heat 1 tablespoon of sesame oil in pressure cooker on “Sauté” setting. Blot chicken pieces dry with paper towel. When sesame oil is sizzling, add chicken and brown for 6-7 minutes, stirring occasionally.
- Press “Cancel” and move chicken to one side of pot. Add vegetables on top of chicken and add ramen noodles to the other side of pot. Pour sauce over noodles, making sure to saturate with sauce. Lock lid and close vent valve. Press “Manual” setting for 4 minutes.
- When timer goes off, allow pressure to release for a few minutes before opening vent valve. When all pressure is released, open lid and toss noodles, vegetables, and chicken to coat with sauce. Serve hot, garnished with chopped cilantro.
Note: if some noodles aren’t cooked through, turn pressure cooker to “Sauté” setting and toss noodles using tongs. Cover with lid and cook 4-5 minutes longer until noodles are tender.
