- Slice chicken into 2-inch pieces and pat dry with paper towel. Pour flour in a shallow bowl. Whisk egg in a second bowl. Stir together panko, ginger, garlic, salt and pepper in a third bowl. Dip each piece of chicken in flour followed by egg and lastly in panko mixture.
- Spray air fryer basket with cooking spray. Working in 2 batches, place chicken in basket of air fryer leaving space between for air to flow. Mist with cooking spray. Air fry at 400ºF for 4 minutes. Flip chicken bites using tongs and air fry 4 minutes longer. Remove chicken bites from air fryer and cover to keep warm. Repeat with remaining chicken.
- While chicken cooks, stir together ingredients for dipping sauce. Serve chicken bites hot with dipping sauce.
