- Peel avocado and slice in half. Remove pit. Slice avocado into ¼ inch thick slices. Pour flour and panko into 2 separate bowls, then beat egg into a third bowl. Stir smoked paprika and salt into panko bread crumbs.
- Add a 1-inch layer of oil to a pan and heat over medium heat until temperature reaches 350°F. Coat slices of avocado in flour followed by egg and panko. Carefully place avocado slices in hot oil and fry until golden brown and crispy, 1-2 minutes on each side. Place fried avocado on plate lined with paper towel.
- Preheat oven to 350ºF. Scramble eggs in a frying pan over medium heat. Divide scrambled eggs between bagel bottoms and top with a slice of American cheese. Bake until cheese is melted, about 5 minutes.
- Top with a few slices of fried avocado, broccoli sprouts and top half of bagels.
