California Almond Wheat Pilaf

ingredients

3 tablespoons butter or margarine
2 cups cracked wheat
Grated peel of 1/2 orange
Juice of 1 orange
Chicken stock
5 tablespoons Kikkoman Less Sodium Soy Sauce
1 cup chopped dried figs
1/2 cup chopped green onions
1/2 cup slivered almonds, toasted

directions

  1. Melt butter in medium skillet. Stir in wheat until coated with butter. Add orange peel.
  2. Combine orange juice with enough chicken stock to make 4 cups liquid. Add liquid and less sodium soy sauce to skillet.
  3. Bring to boil; cover and simmer 45 minutes until wheat is cooked through and all liquid is absorbed.
  4. Remove from heat. Stir in figs, onions and almonds just before serving.
