- Combine soy sauce, oyster sauce, sugar and cornstarch in a bowl. Add chicken thighs to the bowl and marinate for 15 minutes.
- Heat the clay pot, heat the cooking oil over medium heat, add in the shallot, ginger, garlic, onion, shallot and stir-fry until fragrant.
- Spread the ingredients evenly on the bottom of the clay pot. Add the marinated chicken thighs. Turn to medium heat, cover and simmer for 3 minutes. After 3 minutes, open the lid and stir-fry the chicken with shallot, ginger, garlic, onion, shallot.
- Pour mirin along the sides of the pot, cover and continue to simmer on medium heat for 5 minutes.
- After 5 minutes, add chili peppers, cilantro, green onion, stir evenly, cover the lid and turn to high heat, simmer for 1 minute.
