For Fritters
2 cups peeled and grated sweet potato
2 Chinese sausage links, casings removed and finely chopped (about ⅔ cup)
½ cup shredded sharp cheddar cheese
½ cup Kikkoman® Panko Bread Crumbs
2 large eggs + 1 egg white
¼ cup finely chopped green onion
¼ cup vegetable oil for cooking

For Sriracha Sour Cream Dip
½ cup sour cream
¼ cup mayonnaise
2 teaspoons Kikkoman® Sriracha Hot Chili Sauce

directions

  1. Combine sweet potato, sausage, cheese, panko, eggs, and green onion in a medium mixing bowl and stir thoroughly to moisten.
  2. Heat 2 tablespoons of oil in a large non-stick pan over medium heat for 1 minute. Scoop 3-4 mounds of mixture onto the hot skillet using a ⅓ cup measuring cup. Use a spatula to shape into round fritters. Cook for 4 minutes on each side. Transfer cooked fritters to a paper towel lined plate and repeat with remaining mixture, adding oil to the pan 1 tablespoon at a time when needed.
  3. Stir together ingredients for sriracha sour cream dip in a small bowl. Serve fritters warm alongside dipping sauce.
