- Rinse your potatoes, then chop into thin slices (roughly ¼ of an inch – the thinner the crispier!).
- Add all sliced potatoes to a bowl, coating with olive oil, paprika, salt, garlic powder, panko, and parmesan.
- Toss to combine.
- Spread on a foil lined baking sheet. Optional – sprinkle a little more oil, parmesan and panko.
- Bake in the oven at 400°F for 45 minutes.
- Remove and let cook on pan for 10 minutes to crisp further.
- Option to garnish with additional cheese and herbs, then serve and enjoy!
