- Arrange chicken breasts in single layer in shallow baking dish.
- Blend mustard and vinegar until smooth; stir in preserves. Gradually blend in soy sauce; pour mixture over breasts, turning pieces over to coat both sides.
- Bake, meaty side down, in 350ºF. oven 25 minutes. Turn breasts over and bake 20 minutes longer, or until no longer pink in center, brushing occasionally with pan juices.
