- Grease a medium grill pan with olive oil and heat over medium-high heat for 2 minutes. Place peach slices on pan and grill for 1 minute on each side. Set peaches aside to cool.
- Combine ingredients for dressing in a small jar and secure lid. Shake vigorously.
- Arrange lettuce, tomatoes, onions, grilled peaches and walnuts on a serving platter. Pour dressing on top and finish with dollops of creamy goat cheese.
