ingredients

8 oz. dry rice noodles
1/4 cup Kikkoman® Rice Vinegar
1/4 cup canola oil
1 teaspoon Kikkoman® Sesame Oil
1 tablespoon Dijon mustard
1 clove of garlic, minced
2 tablespoons Kikkoman® Soy Sauce
1 teaspoon of Kikkoman® Sriracha Hot Chili Sauce (optional)
1 cucumber, spiralized
4 carrots, spiralized

directions

  1. Cook the rice noodles according to package instructions.
  2. Drain and rinse with cold water until the noodles have cooled.
  3. In a small bowl, whisk together rice vinegar, oil, sesame oil, mustard, garlic, soy sauce, and sriracha.
  4. Toss the rice noodles with cucumber and carrots, then add the vinaigrette until the salad is fully coated.
