ingredients

2 cups Kikkoman® PEARL® Organic Soymilk Unsweetened

2 tablespoons pine nuts

3 tablespoons toasted white sesame seeds

½ teaspoon sugar

1 teaspoon salt

8oz buckwheat flour noodle

½ cup julienned cucumber

2 soft boiled eggs, for serving

10 ice cubes, for serving

Kimchi, for serving

directions

  1. Combine the Kikkoman® unsweetened soy milk with the pine nuts, and toasted white sesame seeds, and blend until smooth. Add salt and sugar, and adjust the salt to your taste.
  2. Bring a large pot of water to a boil over high heat. Add the noodles and stir them with a spoon so they do not stick together. Cook for 1 minute.
  3. Transfer the noodles to a large strainer and rinse them in cold water.
  4. Pour the soymilk on top of the noodles in the bowl. Place cucumber, egg, and kimchi on top of the noodles. Add some ice cubes.
