- Preheat oven to 350ºF. Meanwhile, heat ground pork in a 10-inch round cast iron skillet over medium heat and use a spatula to break up into crumbles. Cook 5 minutes. Stir in sage, garlic, salt, black pepper and soy sauce to coat pork.
- Stir in potatoes, bell pepper, onion and paprika. Cover and cook for 10 minutes.
- Turn heat off. Sprinkle cheese on top of skillet and make four wells in mixture to create room for eggs. Add 2 eggs to each well.
- Transfer skillet to oven and bake 12-14 minutes, until egg whites are cooked through. Serve hot, garnished with green onion.
