- Preheat oven to 300ºF. Spread tortilla chips on a small baking sheet and top with shredded cheese. Bake 6-7 minutes to melt cheese.
- While cheese melts on tortilla chips, Stir together soy sauce, lime juice, cumin, chipotle powder and garlic powder in a small bowl. Set aside. Heat oil in a large skillet over medium heat for 2 minutes. Blot excess moisture from shrimp with paper towel. Add shrimp to skillet and cook for 1 minute. Flip and cook 1 minute longer.
- Reduce heat to low. Pour soy sauce mixture into skillet and stir to coat shrimp. Cook 30 seconds longer. Turn heat off.
- Top tortilla chips with shrimp, pico de gallo, olives and jalapeños. Serve hot.
