Midwestern Potato Soup

Makes 4 to 6 servings

ingredients

3/4 pound long white potatoes, peeled and cut into 1/2-inch cubes (about 2 cups)
1 cup chopped red onion
1 can (14 oz.) chicken broth
1/2 cup all-purpose flour
1 cup Pearl Original Organic Soymilk
2 tablespoons butter or trans fat-free butter-like spread
1/2 teaspoon salt
1/4 teaspoon pepper
4 ounces sliced ham, cut into 1/2-inch squares (about 1 cup)

directions

  1. Combine potatoes, onion and 1-2/3 cups water in large saucepan. Bring to boil. Cover and simmer 15 minutes, or until potatoes are tender.
  2. Blend chicken broth and flour until smooth; stir mixture into saucepan with soymilk, butter, salt and pepper. Return to boil over medium-high heat, stirring constantly. Reduce heat; simmer 1 minute.
  3. Stir in ham; cook until heated through.
