ingredients

2 tablespoons olive oil
1 pound chicken (thighs or breasts), cut into bite-sized pieces
1 teaspoon paprika
½ teaspoon black pepper
3 cloves garlic, minced
1 cup orzo
2 cups chicken stock
1 teaspoon dried oregano
2 tablespoons dried dill
2 tablespoons Kikkoman® Umami Joy Sauce
2 cups fresh spinach
½ cup jarred roasted red bell peppers, sliced
⅓ cup Kalamata olives, halved

directions

  1. Heat olive oil over medium-high heat in a large skillet. Toss the chicken with paprika and black pepper, then sear until golden brown, about 8 minutes, stirring occasionally. Remove and set aside.
  2. In the same pan, lower heat slightly and add garlic. Sauté 30 seconds, until fragrant. Add orzo and toast for 1–2 minutes. Pour in chicken stock and stir in oregano, dill, and Umami Joy Sauce. Scrape up any browned bits from the bottom. Bring to a simmer, cover, and cook for 10 minutes, stirring occasionally, until orzo is tender and most liquid is absorbed.
  3. Stir in spinach and let cook for 2 minutes. Add cooked chicken, roasted red peppers, and olives. Stir to combine. Cook 2 minutes longer. Serve warm.
