- Preheat oven to 400ºF. Combine potatoes, green beans, olive oil, salt and pepper on a large sheet pan. Toss to coat.
- Combine sesame oil, lemon juice, honey, garlic, salt and pepper in a medium mixing bowl. Stir well. Add chicken thighs to the bowl and coat with sesame mixture.
- Nestle chicken thighs and vegetables on sheet pan. Scatter lemon slices and fresh thyme over chicken and vegetables. Roast for 30-35 minutes, until chicken is cooked through and skin is lightly browned.
- Serve hot, topped with additional fresh thyme and a drizzle of drippings from the pan.
