ingredients

1 tablespoon vegetable oil 

16 oz bone-in beef short ribs 

Freshly ground black pepper 

3 medium cloves garlic, minced 

1 tablespoon minced fresh ginger 

1/2 cup Kikkoman®Koterri Mirin®

1/4 cup Kikkoman®Ponzu Sauce 

2 tablespoons Kikkoman®Soy Sauce 

1 tablespoon Kikkoman®Sesame Oil 

1/2 cup water 

1 tablespoons Kikkoman®Rice Vinegar 

1/3 cup dark brown sugar 

2 green onions, thinly sliced, including green parts

directions

  1. Heat oil in the pan over high heat until shimmering. Season meat generously with pepper, then sear until browned on all sides, about 4 minutes per side. 
  2. Reduce heat to medium. Add garlic and ginger and cook, stirring constantly, until browned, about 2 minutes. Add all the remaining seasoning and stir to combine. 
  3. Bring to a simmer, cover and turn to low heat then braise for about 2 hours. adding water if necessary to keep it halfway submerged throughout cooking, until beef is fork-tender.
  4. Garnish with green onion and serve.
