ingredients

1 cucumber
1 package (6 oz.) baby spinach leaves
1 large carrot, coarsely shredded
2 cups shredded, cooked chicken (about 1/2 deli-roasted chicken)
1-1/2 cups seedless red grapes, halved
1/2 cup coarsely chopped fresh cilantro leaves
1/4 cup Kikkoman Hoisin Sauce
2 tablespoons Kikkoman Rice Vinegar
2 teaspoons Kikkoman Soy Sauce
2 tablespoons vegetable oil

directions

  1. Trim and discard ends of cucumber, then peel lengthwise with vegetable peeler to form stripes. Cut cucumber lengthwise in half; remove seed. Cut each half into thin slices.
  2. Combine cucumber, spinach, carrot, chicken, grapes and cilantro in large salad bowl.
  3. Blend together hoisin sauce, vinegar and soy sauce in a medium-size bowl. Gradually whisk in oil until well blended. Pour over salad; toss to coat all pieces well. Serve immediately.
