ingredients

For Avocado-Washed Gin (yields about 6 ounces)​
1 avocado, ripe
12 ounces gin

For Cocktail
2 ounces avocado washed gin​
1 ounce cucumber juice (fresh, skin removed)
½ ounce ginjo sake (or a dry sake)
2 teaspoons Kikkoman® Rice Vinegar
2-3 drops Kikkoman® Soy Sauce
2 heavy pinches flaky sea salt
Garnish: Kikkoman® Sesame Oil droplets & a piece of cucumber avocado roll

directions

  1. Start by scooping out 1 ripe avocado from its skin and place in a jar with gin. Let infuse overnight (about 8 hours) in the fridge, then strain using a fine mesh strainer, and then again using a coffee filter or cheesecloth.
  2. Remove skin from a cucumber and cut into small pieces. Add to a juicer (if you do not have a juicer, add the cucumber pieces and some fresh water to a blender, blend, and strain using a fine mesh strainer).
  3. Add all ingredients to a cocktail shaker with ice and shake until well chilled. 
  4. Strain cocktail into a chilled coupe.
  5. Garnish with a drizzle of toasted sesame oil and a piece of fresh cucumber avocado roll.
